Pasta alla carbonara

 

 

Ingredients:
300g of pasta (Penne)
150g of bacon
3 eggs
1 onion
salt and pepper
50g of Pecorino cheese
50g of Parmesan cheese

In a pot, brown the finely cut onion with 1/2 tablespoon of olive oil for 4 minutes at high heat. Cover with Magic Cooker.

 

 

Add the bacon and continue cooking for another 3 minutes at high heat.

 

 

Move the pot away from the flame, wait 1 minute and raise the lid. Add the pasta and 350ml of cold water and salt. Stir everything well.

 

Cover with Magic Cooker and reposition on high heat for about 3 minutes until the steam comes out. After that, continue at low heat for the time indicated on the package of pasta. Stir at least twice.

 

In another bowl, beat the eggs with a little salt, then add the cheese and the Parmesan with some pepper. Stir everything well.

 

 

Once finished the cooking time for the pasta, turn off the heat, wait 1 minute, lift the lid and pour over the sauce, cover with the lid again and wait 2 minutes without lifting the lid.

 

 

During this time the egg also gets cooked without thickening. Serve in a plate and sprinkle a little more Parmesan and pepper depending on your taste.

Pasta with chickpeas and bacon

 

Ingredients:

300g of pasta

100g of diced speck

1 onion

2 cans of chickpeas

salt, pepper, rosemary

Julien cut the onion, cover with Magic Cooker and saute with half a table spoon of oil for 3 minutes over high heat.

 

 

Add the bacon and continue cooking for another 2 minutes.

 

 

At this point, add the chickpeas and stir. Continue cooking at high heat for another 4 minutes.

 

 

Move the pot away from the flame, wait 1 minute for the steam to go away and add the pasta along with 350ml of cold water, salt, pepper and rosemary.

 

 

Stir and put back on the stove over high heat for 3-4 minutes until the steam comes out, then reduce to low heat and continue to cook for the time indicated on the box of pasta. Make sure to stir everything at least 2 times during the cooking time. Once cooked, turn off the heat, wait 2 minutes and serve it.

Salmon with citrus fruits

 

Ingredients:

3 slices of fresh salmon

1 orange

1 lemon

1 teaspoon of honey citrus

1 shallot

salt

Wash the salmon and dry it up, then grease it with the olive oil. Warm up an empty pan and cover it with Magic Cooker, then lift the lid and place the salmon.

 

 

Cover again and cook at high heat for 3 minutes. Move the pan away from the flame, wait 1 minute and turn the fish around. Also add the shallot finely chopped, and reposition the pan on high heat for another 3 minutes.

 

 

Move the pan away from the flame again and add lemon juice, half of the orange juice, zest of orange, honey and salt.

 

 

Cover with Magic Cooker and cook for 5 minutes on high heat.

 

 

 

Turn off the heat, let it rest for 2 minutes, and …

Custom Skewers

 

Ingredients for the rolls:

slices of veal

2 eggs

dim oat

flour

frying oil

mixed herbs

salt

 

Ingredients for the sauce:

1 can of tomato pulp

3 cloves of garlic

chili

salt, pepper

2 teaspoons of curry

2 teaspoons of soy sauce

oregano

 

Beat well the veal slices with a meat mallet to make them thin. Season them with salt and mixed herbs. Place a skewer stick at the side of the slice and roll them up.

 

 

Once you have finished rolling them up, start passing them first through the flour, then through the beaten eggs with some salt and finally through the dim oats.

 

 

This should be your result:

 

 

In a pan, pour enough frying oil to reach about 1cm of height. Cover with Magic Cooker and heat up the pan for 2 minutes at high heat. Lift the lid and place the skewers.

 

 

Let them cook at medium-high heat for 3 minutes, covered with Magic Cooker, then turn them on the other side and cook them for another 3 minutes.

 

Meanwhile, prepare the sauce. In a pan, put the tomato pulp, the crushed garlic, curry, oregano, salt, pepper, chili, soy sauce and cover with Magic Cooker. Turn on high heat for 2 minutes and then lower it for another 5 minutes. Done!

Soak the skewers in the sauce!

Cauliflower meatloaf

 

Ingredients:

about 500g cauliflower

2 cups of wheat flour

2 tablespoons of pumpkin seeds

3 anchovies in spicy oil

1 clove of garlic

In a pan, put 2 tablespoons of olive oil, crushed garlic, anchovy pieces, pumpkin seeds. Cover with Magic Cooker and cook at high heat for 3 minutes.

 

Wash the cauliflower and divide it into florets. After that, add it to the pan together with some salt.

 

 

Cover with Magic Cooker and cook at medium-low heat for 15 minutes.

 

Mash the cauliflower with a fork, add the wheat flour and stir well. Form a loaf and place it on a wet baking paper.

 

 

Close the loaf inside the baking paper and place it in a pot with 1/2 cup of water. Cover with Magic Cooker and cook on high heat for 2 minutes. After that, cook at low heat for another 25 minutes.

 

Let cool and then cut into slices.

Muffins with Nutella

 

Ingredients:

150g caster sugar

150g butter, melted

6 eggs

120g self raising flour

30g unsweetened cacao powder

120g Nutella

120g icing sugar

1 teaspoon of vanilla

(ingredients for about 22 pieces)

Put in a bowl the eggs with the sugar and vanilla. Stir with a whisk until you get a mixture that is clear and frothy. Add flour and cacao powder to the mixture and stir well. Pour the melted butter and continue to stir gently.

In the pot, place the muffin molds. Inside each mold, put the usual muffin paper mold  (this way, once cooked, all you have to do is to remove the paper mold with the muffin and then place a new paper mold) and fill three quarters of it with the mixture.

 

 

 

Put the pot on the stove at high heat for 2 minutes, use the heat distributor and cover with Magic Cooker. After that, lower the heat to medium-low and continue cooking for another 15-20 minutes, without drying the lid. You can uncover the pot to check if it’s done.

 

 

 

Remove the paper molds, let them cool off and in the meantime prepare the icing. Stir well Nutella with icing sugar and 2-3 tablespoons of hot water until you have a smooth and thick mixture. Spread this mixture on top of every muffin and then decorate as you please.

Vegetable garnish

Ingredients:

1 zucchini

2 carrots

1 fennel

1 knob of butter

salt, pepper, sage, oregano, curry

1 teaspoon soy sauce

 

Cut the vegetables into sticks and then put them in the pan along with all the condiments.

 

 

 

Cover with Magic Cooker and cook at high heat for 3 minutes, then continue on medium heat for 7 minutes. You have to stir only once, halfway through cooking.

Cake with mascarpone

Ingredients:

450gr flour 00

100g butter

300gr sugar

3 eggs

250gr mascarpone

1 teaspoon baking powder for cakes

200ml milk

grated zest of one lemon

1 pinch of salt

chocolate

 

Beat the eggs with the sugar until they are frothy, add slowly the melted butter, then gradually the mascarpone, milk, lemon zest, and finally the flour with the baking powder. Pour the mixture into the greased and floured pan (using a titanium pot 26 you’ll get a donut, putting a glass in the middle, plus 10 muffins). Cover with Magic Cooker and cook on high heat for 2 minutes, then continue on low heat for the next 25-30 minutes, drying several times the lid. Once cooked (toothpick test), leave covered for another 3 minutes with the heat turned off. After that, remove the lid  and let it rest in the pot until it cools off.

Pie with vegetables

Ingredients:

a roll of dough brisè

250g of soft white Italian cheese (cow)

2 carrots

a handful of frozen spinach

a handful of frozen peas

a shallot

3 tablespoons of butter

1 egg

nutmeg

salt

In the pan, add a knob of butter, salt, the carrots and half shallot (finely cut). Cover with Magic Cooker and cook at medium heat for 6-7 minutes.

 

 

In another pan, add a knob of butter, spinach, salt and nutmeg. Cook at medium heat for 6-7 minutes, covering with Magic Cooker.

 

 

In a third pan, cook the peas (even if frozen) with a knob of butter, the remaining half shallot and salt for 6-7 minutes.

 

 

In a bowl, mix well the cheese, the egg and the nutmeg together with some salt.

 

 

Cut from the border of roll of dough a strip thick 1cm and keep it for later, then place in the pan or in the pot (26cm diameter) the remaining roll with it’s baking paper.

Prick the bottom with a fork, spread over the cheese and divide the surface at your own will with the strip of dough that you previously cut from the main roll. Fill the gaps betweens the strips with the vegetables prepared before.

 

 

Cover with Magic cooker and cook at high heat for 2 minutes, then at low heat for almost 25 minutes. Make sure to dry the lid occasionally.

Mashed Potatoes

 

Ingredients: 600g potatoes, 60ml milk, 2 knobs of butter, salt.

Cut the potatoes into cubes, put them in the pot with the milk, butter and salt.

 

Cover with Magic Cooker, turn on high heat for a few minutes until steam comes out, then lower the heat and cook for 15 minute (turning it once). After that, let it rest for 2 minutes.

 

 

Stir well with a whisk until it becomes creamy and smooth. Serve it as a side dish.

Grilled chicken thighs

Ingredients: 3 boneless chicken thighs, salt, spices (sage, rosemary, oregano).

 

Take  an empty pan, cover with Magic Cooker and heat on high flame for about 3-4 minutes (it has to become very hot, just like a grid). Lift the grid and place the meat.

 

Leave the flame on high and cook for about 4 minutes, after that move the pan away from the stove. Wait a minute in order to get rid of the steam, lift the lid and turn the meat around.

 

Let it cook for another 4 minutes at high heat.

Rainbow cake with yogurt

 

Ingredients:

2 cups of yogurt

2 cups of sugar

3 cups of flour

3 eggs

1/2 cup of vegetable oil

1 packet of yeast

1 teaspoon of vanilla

Beat the eggs with the sugar in a bowl until it becomes frothy, add the yogurt, the vegetable oil and the vanilla, keep stirring it well and finally add the flour with the yeast. At your convenience you can make the colors with food coloring or just with cholocate.

Take a nonstick pan or one made of ceramic on the inside (NOT steel), grease it and flour  it. Take a glass, grease it on the outside and put it in the center of the pan. After that, pour  the mixture by various layers of color.

Place a distributor of heat on the average stove and then on top of that place the pan. Turn on high heat for the first 2-3 minutes (depending on the size of the pan) and then lower  it to medium-low heat for about 40 minutes. Make sure to dry the lid’s underside 5 or 6 times during this whole process. Eventually you can check for doneness with a toothpick or you can wait for the borders of the cake to detach from the pan. Once you assume the cake is done with either of those 2 methods you are free to turn off the heat. After you turned off the heat, leave the pan covered with the lid for another 3-5 minutes and then take it off. Leave the cake inside the pan until it cools off and after that you are free to take it out.

Chunks of pork with leek

Ingredients: 1 leek, 2 carrots, 1 celery, diced 700 g pork, flour, salt, pepper, bay leaves, sage, 1/2 cup white wine, 300 ml vegetable broth, 2 tablespoons olive oil.

Chop the leek, the carrots, the celery and then place them in the pan with 2 tablespoons of oil.

Cover with Magic Cooker, turn on high heat and cook for about 3 minutes. After that, add the pieces of pork in the pot (even if they are frozen) and continue cooking covered at high heat for another 5 minutes.

 

Add the wine, poured from above the lid, without uncovering the pot and then continue cooking at high heat for another 2 minutes. Pour in the broth, even if it’s cold, just enough to not cover the meat and then add the other spices. Continue cooking at high heat until steam comes out, at this point lower the heat and let it cook for another 30-40 minutes. To thicken the sauce, stir a spoonful of flour with cold water or broth in bowl and add the mixture in the pot while stirring well.

Continue cooking at low heat for another 15 minutes. After that, turn it off and let it rest for 2 minutes.

Penne all’amatriciana (Pasta with bacon)

Ingredients: 200g diced bacon, 1 onion, 1 can of chopped tomatoes, 300g pasta, salt and pepper depending on your taste.

 

Finely chop the onion, add the bacon and a spoon of olive oil in the pan. Cover with Magic Cooker and cook it for 3 minutes at high heat.

Add the pasta…

 

… the chopped tomatoes…

 

…enough water to just cover the pasta, some salt…

…cover with Magic Cooker, high heat until is bubbles (at 97° C), then lower the heat and from that point onwards start counting the cooking time for the pasta that’s written on the box (make sure to turn the mixture a couple of times). After that, turn off the heat and let it rest for 2 minutes…

Nesquik Cake

 

Ingredients:

280g Flour

250g Sugar

3 Eggs

2 Spoons of Nesquik powder

1 Teaspoon of baking powder for cakes

100 ml Seed oil

40 ml Milk

 

Knead the eggs with the sugar until you get a foam, add the milk, Nesquik, oil, and finally the flour with the baking powder. Prepare a greased and floured mold and then pour the mixture in it. Put the mold in a pot and cover it with Magic Cooker. Cook it at high flames for the first 2-3 minutes, then low heat for another 30 minutes.
